Local White Anchovies (L)
Anchovies are sea small green fish with slender body shape. Anchovy is known as ikan bilis in Malaysia. Anchovies are use commonly in Malaysian cooking. Anchovies are usually in dried salted form in Malaysia. Anchovies in Malaysia are use as fish stock or base soup, deep fried or for stir frying.
The large size of white anchovies is brownish in color and firm in texture. This is a salted dried anchovy. The anchovy is whole and with the head on. Size of this anchovy is from 5 t0 7 cm.
This salted dried anchovy is great to be boiled with the whole head on as fish stock or base soup and peeled off the head and inner body parts for deep fried as a snack.
